2 Bell Peppers-chopped (any color)
2 cloves Garlic-minced

Instructions
  1. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Smoked Sausage and cook until browned, about 5-7 minutes.
  3. Add Onion and Bell Peppers to the pot and cook until softened, about 5 minutes.
  4. Stir in Garlic, Paprika, Cayenne Pepper, and Thyme and cook for 1 minute more.
  5. Add Diced Tomatoes (with their juice) and Okra to the pot. Season with Salt and Black Pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the okra is tender and the stew has thickened.
  7. Serve hot with rice or cornbread.
