  1. Rinse the Quinoa under cold water.
  2. Combine Quinoa and Water in a saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, or until all water is absorbed. Fluff with a fork and let cool.
  3. In a large bowl, combine the cooled Quinoa, Cucumber, Cherry Tomatoes, Red Onion, and Bell Pepper.
  4. In a small bowl, whisk together the Olive Oil, Lemon Juice, Dried Oregano, Salt, and Black Pepper to create the Dressing.
  5. Pour the Dressing over the Quinoa and vegetables and toss to combine.
  6. If desired, sprinkle with Feta Cheese before serving.
