1 lb Asparagus-trimmed
1.5 lbs Baby potatoes-halved
3 tbsp Olive oil
2 tbsp Lemon juice

A slightly more refined sheet pan dinner with flavorful potatoes and tender asparagus alongside perfectly roasted salmon.
Instructions
  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, toss Baby potatoes with 1 tbsp Olive oil, salt, and pepper.
  3. In a small bowl, whisk together remaining Marinade ingredients.
  4. Place Potatoes on one side of the baking sheet, Asparagus on the other, and Salmon in the center. Drizzle Salmon and Asparagus with Marinade.
  5. Roast for 15-20 minutes, or until salmon is cooked through, potatoes are tender, and asparagus is tender-crisp.
