Instructions
- Prepare the Waffle Batter: In a large bowl, whisk together the Cake Flour, Sugar, Baking Powder, Baking Soda, and Salt.
- In a separate bowl, whisk together the Large Eggs, Buttermilk, Browned Butter, and Vanilla Extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the Roasted Corn kernels. Do not overmix.
- Prepare the Chipotle-Lime Crema: In a small bowl, whisk together the Mexican Crema, minced Chipotle Peppers in Adobo Sauce, Lime Juice, and Smoked Paprika. Set aside.
- Heat your waffle iron according to the manufacturer's instructions.
- Pour the appropriate amount of waffle batter onto the hot waffle iron and cook until golden brown and crispy.
- Top each waffle with a generous dollop of the Chipotle-Lime Crema, crumbled Queso Fresco, a sprinkle of Tajin, and Chopped Cilantro.
- Serve immediately.
