Instructions

  1. Prepare the Waffle Batter: In a large bowl, whisk together the All-Purpose Flour, Sugar, Baking Powder, and Salt.
  2. In a separate bowl, whisk together the Large Eggs, Buttermilk, Melted Butter, and Vanilla Extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Prepare the Elote Topping: In a skillet, sauté the Fresh Corn kernels until slightly charred. Let cool.
  5. In a medium bowl, combine the sautéed Corn, Mexican Crema, Mayonnaise, Cotija Cheese, Chili Powder, Smoked Paprika, Cayenne Pepper, and Lime Juice. Mix well.
  6. Heat your waffle iron according to the manufacturer's instructions.
