Instructions
- Prepare the Rosemary-Garlic Crème Fraîche: Combine all Rosemary-Garlic Crème Fraîche ingredients in a small bowl and mix well. Refrigerate until ready to serve.
- Mash the Sweet Potato Base sweet potato fries in a large bowl, leaving some texture.
- Add the Potato Starch, Egg Yolk, Heavy Cream, Nutmeg, White Pepper, and Sea Salt to the mashed sweet potatoes.
- Mix well until everything is combined.
- Heat the Duck Fat in a large skillet over medium-high heat.
- Form the sweet potato mixture into small, neat patties.
- Fry the patties for 2-3 minutes per side, or until deeply golden brown and crispy.
- Serve immediately with the Rosemary-Garlic Crème Fraîche.
