A classic dish of roasted game hen encased in puff pastry, perfect for a special occasion.
Instructions
- Preheat oven to 375°F (190°C).
- Season Chicken with olive oil, salt, and pepper.
- Prepare Duxelles: Melt butter in a large skillet over medium heat. Add shallots and cook until softened, about 5 minutes. Add mushrooms and cook, stirring occasionally, until all liquid has evaporated and mushrooms are browned, about 15-20 minutes. Stir in thyme, salt, and pepper. Remove from heat and let cool.
- Roll out puff pastry on a lightly floured surface. Cut into four equal pieces.
- Place a game hen in the center of each puff pastry piece. Spread a generous amount of Duxelles over each hen.
- Wrap the puff pastry around each hen, sealing the edges with water or egg wash. Brush the pastry with beaten egg.
- Cut a small vent in the top of each pastry-wrapped hen.
- Bake for 45-60 minutes, or until the pastry is golden brown and the chicken is cooked through (internal temperature of 165°F/74°C).
- Let rest for 10 minutes before serving.
