Instructions
  1. Preheat oven to 375°F (190°C).
  2. Season Chicken with olive oil, salt, and pepper.
  3. Prepare Duxelles: Melt butter in a large skillet over medium heat. Add shallots and cook until softened, about 5 minutes. Add mushrooms and cook, stirring occasionally, until all liquid has evaporated and mushrooms are browned, about 15-20 minutes. Stir in thyme, salt, and pepper. Remove from heat and let cool.
  4. Roll out puff pastry on a lightly floured surface. Cut into four equal pieces.
  5. Place a game hen in the center of each puff pastry piece. Spread a generous amount of Duxelles over each hen.
  6. Wrap the puff pastry around each hen, sealing the edges with water or egg wash. Brush the pastry with beaten egg.
  7. Cut a small vent in the top of each pastry-wrapped hen.
  8. Bake for 45-60 minutes, or until the pastry is golden brown and the chicken is cooked through (internal temperature of 165°F/74°C).
  9. Let rest for 10 minutes before serving.
