Roll out puff pastry on a lightly floured surface. Cut into four equal pieces.
Place a game hen in the center of each puff pastry piece. Spread a generous amount of Duxelles over each hen.
Wrap the puff pastry around each hen, sealing the edges with water or egg wash. Brush the pastry with beaten egg.
Cut a small vent in the top of each pastry-wrapped hen.
Bake for 45-60 minutes, or until the pastry is golden brown and the chicken is cooked through (internal temperature of 165°F/74°C).
Let rest for 10 minutes before serving.
