1/4 cup Maple Syrup-pure

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Season Quail with Salt and Black Pepper.
  3. In a small bowl, whisk together all Maple Glaze ingredients.
  4. Place Quail in a baking dish and brush generously with half of the Maple Glaze.
  5. Bake for 30 minutes, basting with remaining Maple Glaze halfway through.
  6. While Quail is baking, prepare the Cranberry Compote. In a saucepan, combine all Cranberry Compote ingredients.
  7. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until cranberries have burst and the compote has thickened.
  8. Serve Quail with Cranberry Compote.
