A simple and healthy way to achieve crispy, golden-brown potato fries using minimal oil and a basic air frying technique.
Ingredients
- 2 large Russet potatoes-peeled and cut into sticks
- 1 tbsp Vegetable oil
- 1/2 tsp Kosher salt
- 1/4 tsp Black pepper-ground
Instructions
- Place the cut Potatoes in a large bowl and cover with cold water. Allow them to soak for 15 minutes to remove excess starch, which helps with crispiness.
- Drain the potatoes and pat them thoroughly dry with a clean kitchen towel or paper towels. Moisture is the enemy of a crisp fry.
- In a dry bowl, combine the dried potatoes with all Seasoning ingredients. Toss until every potato stick is evenly coated in oil and salt.
- Preheat your air fryer to 380°F (193°C).
- Place the seasoned potatoes in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding.
- Cook for 15 to 20 minutes, shaking the basket every 5 minutes, until the fries are golden brown and crispy.
- Remove from the air fryer and serve immediately while hot.
Garlic Parmesan Herb Fries
Elevated fries using a par-boiling technique for a fluffy interior and finished with fresh garlic, herbs, and aged cheese.
Ingredients
- 2 large Russet potatoes-scrubbed and cut into thick batons
- 1 tbsp White vinegar
- 1.5 tbsp Extra virgin olive oil
- 1 tsp Cornstarch
- 1/2 tsp Garlic powder
- 3 tbsp Parmesan cheese-finely grated
- 1 tbsp Fresh parsley-finely chopped
- 1 clove Garlic-minced
- 1/2 tsp Sea salt
Instructions
- Bring a large pot of water to a boil and add the vinegar from the Potato Preparation group. Add the potatoes and boil for 8 minutes until slightly tender but not falling apart.
- Drain the potatoes and let them steam dry on a wire rack for 5 minutes. This removal of moisture is essential for the upgraded texture.
- Transfer the potatoes to a bowl and toss with the Crisping Coating ingredients. The cornstarch will create a thin, starchy layer for extra crunch.
- Preheat the air fryer to 400°F (204°C).
- Air fry the potatoes for 15 to 18 minutes, shaking the basket halfway through until deep golden brown.
- While the fries are hot, transfer them to a clean bowl and toss with all Finishing Toppings ingredients until the cheese slightly melts and the garlic becomes fragrant.
- Serve warm with a side of aioli or spicy ketchup.

Triple-Cooked Wagyu Tallow Fries with Saffron Aioli
The ultimate fry experience featuring a triple-cook method, rich wagyu tallow, and finished with truffle oil and a handmade saffron dipping sauce.
Ingredients
- 3 medium Yukon Gold potatoes-cut into uniform rectangles
- 3 tbsp Wagyu beef tallow-melted
- 1 tsp White truffle oil
- 1 tsp Fleur de sel
- 1 tbsp Fresh chives-minced
- 1/2 cup Mayonnaise-high quality
- 1 pinch Saffron threads-bloomed in 1 teaspoon warm water
- 1 tsp Lemon juice-freshly squeezed
- 1/2 clove Garlic-grated into a paste
Instructions
- Simmer the Potatoes in salted water for 10 minutes until the edges just begin to soften. Carefully drain and place on a tray in the freezer for 30 minutes to dehydrate the surface.
- Remove potatoes from the freezer and toss thoroughly with the melted Cooking Fat (Wagyu tallow) until glazed.
- Preheat the air fryer to 325°F (163°C). Cook the fries for 12 minutes to create a structural crust. This is the second cook.
- Increase the air fryer temperature to 400°F (204°C). Cook for an additional 10 to 12 minutes until the fries are exceptionally crisp and mahogany brown. This is the third cook.
- While fries are finishing, whisk together all Saffron Aioli ingredients in a small ramekin. Let sit for at least 10 minutes for flavors to meld.
- Transfer hot fries to a metal bowl. Drizzle with the white truffle oil and toss with fleur de sel and fresh chives from the Garnish and Seasoning group.
- Serve the hot fries immediately alongside the Saffron Aioli for dipping.
