A simple and delicious hummus recipe, perfect for beginners.
Ingredients
- 1 (15 ounce) can Chickpeas, drained and rinsed
- 1/4 cup Tahini
- 1/4 cup Lemon juice, freshly squeezed
- 1 clove Garlic, minced
- 2 tbsp Olive oil
- 2-3 tbsp Water, to thin
- 1/2 tsp Salt
- 1/4 tsp Ground cumin
Instructions
- Combine all Chickpeas, Tahini, Lemon Juice, Garlic, Olive Oil, and Seasoning ingredients in a food processor.
- Process until smooth, adding Water a tablespoon at a time until the desired consistency is reached.
- Taste and adjust seasonings as needed.
- Serve with pita bread, vegetables, or crackers.
Creamy Homemade Hummus with Roasted Garlic
A slightly elevated hummus recipe featuring roasted garlic for deeper flavor.
Ingredients
- 1 (15 ounce) can Chickpeas, drained and rinsed, skins removed (optional)
- 1 head Garlic, roasted
- 1/3 cup Tahini, good quality
- 1/4 cup Lemon juice, freshly squeezed
- 3 tbsp Olive oil, extra virgin
- 1 tbsp Olive oil, for drizzling
- 2-4 tbsp Ice water, to thin
- 1/2 tsp Salt
- 1/4 tsp Ground cumin
- Pinch Paprika, for garnish
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the head of Garlic, drizzle with Olive Oil, wrap in foil, and roast for 30-40 minutes, or until soft. Let cool slightly.
- Squeeze the roasted Garlic cloves out of their skins into a food processor.
- Add the Chickpeas, Tahini, Lemon Juice, Olive Oil and Seasoning to the food processor.
- Process until very smooth, adding Ice Water a tablespoon at a time until the desired creamy consistency is reached.
- Taste and adjust seasonings as needed.
- Transfer to a serving bowl, drizzle with Olive Oil, and sprinkle with Paprika.
- Serve with warm pita bread, fresh vegetables, or crackers.

Silky Smooth Hummus with Preserved Lemon and Toasted Pine Nuts
An elevated hummus recipe using dried chickpeas, homemade tahini, preserved lemon, and toasted pine nuts for a refined flavor and texture.
Ingredients
- 1 cup Dried chickpeas, soaked overnight
- 1/2 cup Homemade tahini (see instructions)
- 1 cup Sesame seeds
- 2 tbsp Olive oil
- 1/4 Preserved lemon, rind only, finely chopped
- 2 tbsp Lemon juice, freshly squeezed
- 4 tbsp Olive oil, high-quality extra virgin
- 1 tbsp Olive oil, for drizzling
- 1/4 cup Pine nuts, toasted
- 1 clove Garlic, minced
- 2-4 tbsp Ice water, to thin
- 1/2 tsp Salt, fleur de sel preferred
- 1/4 tsp Ground cumin, freshly ground
Instructions
- Soak the Chickpeas overnight in plenty of water.
- Drain and rinse the Chickpeas. Place in a pot, cover with fresh water, and bring to a boil. Reduce heat and simmer for 1-1.5 hours, or until very tender. Drain and reserve some of the cooking liquid.
- To make the Tahini, lightly toast the Sesame Seed ingredients in a dry skillet over medium heat until fragrant. Let cool slightly. Grind in a high-speed blender or food processor with Olive Oil until smooth.
- In a high-speed blender, combine the cooked Chickpeas, Homemade Tahini, Preserved Lemon, Lemon Juice, Garlic, Olive Oil, and Seasoning.
- Blend until completely smooth, adding Ice Water a tablespoon at a time, and reserved Chickpea cooking liquid as needed, until a silky smooth texture is achieved. You may need to blend for several minutes.
- Taste and adjust seasonings as needed.
- Transfer to a serving bowl, drizzle with Olive Oil, and sprinkle with Toasted Pine Nuts.
- Serve immediately with warm pita bread or crudités.
