Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together all Dry Ingredients.
  3. In a large bowl, cream together the Unsalted Butter, Granulated Sugar, and Brown Sugar until light and fluffy.
  4. Beat in the Large Eggs one at a time, then stir in the Lemon Juice, Vanilla Extract, and Lemon Zest.
  5. Gradually add the Dry Ingredients to the Wet Ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the White Chocolate Chips and Raspberries.
  7. Drop by rounded tablespoons onto the prepared baking sheets.

  • 1 cup Powdered Sugar
  • 1-2 tbsp Lemon Juice

Instructions

  1. Prepare the Pâte Sablée: In a food processor, pulse the Flour and Powdered Sugar together. Add the cold, cubed Unsalted Butter and pulse until the mixture resembles coarse crumbs. Add the Egg Yolk and Lemon Zest and pulse until the dough just comes together. Flatten into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. On a lightly floured surface, roll out the chilled Pâte Sablée to about 1/4 inch thickness.
  4. Cut out cookies using a cookie cutter or simply cut into squares. Place on the prepared baking sheets.
  5. Bake for 12-15 minutes, or until lightly golden around the edges.
  6. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
