20-Minute Chicken Stir Fry

  1. In a medium bowl, whisk together all Sauce ingredients (soy sauce, water, brown sugar, and cornstarch) until the sugar and cornstarch are dissolved.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the Chicken pieces and cook until browned and cooked through, about 5 to 7 minutes; remove chicken from the pan and set aside.
  4. Add the remaining tablespoon of oil to the same pan and stir in the Broccoli florets, cooking for 3 minutes until bright green and tender-crisp.
  5. Stir in the Garlic and Ginger from the Vegetables and Aromatics group and cook for 30 seconds until fragrant.
  6. Return the cooked Chicken to the skillet and pour the Sauce mixture over the top.
  7. Toss everything together for 1 to 2 minutes until the sauce has thickened and coated the chicken and vegetables evenly.
