Kimchi Fried Rice

  1. In a small bowl, combine all Sauce ingredients. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and cook until softened, about 3 minutes.
  3. Add the diced ham/spam and kimchi to the skillet. Stir-fry for another 2 minutes.
  4. Add the cooked rice to the skillet. Break up any clumps and stir-fry for 3 minutes, mixing well with the kimchi and ham/spam.
  5. Pour the Sauce over the rice mixture and stir-fry for another 2 minutes, ensuring everything is evenly coated.
  6. Move the rice to one side of the skillet and add the remaining 1 tablespoon of vegetable oil to the empty side. Crack the eggs into the oil and cook to your desired doneness.
  7. Serve the kimchi fried rice topped with the fried eggs and garnished with chopped scallions.
