🎙️ Cook with voice coach- In a small bowl, combine all Sauce ingredients. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and cook until softened, about 3 minutes.
- Add the diced ham/spam and kimchi to the skillet. Stir-fry for another 2 minutes.
- Add the cooked rice to the skillet. Break up any clumps and stir-fry for 3 minutes, mixing well with the kimchi and ham/spam.
- Pour the Sauce over the rice mixture and stir-fry for another 2 minutes, ensuring everything is evenly coated.
- Move the rice to one side of the skillet and add the remaining 1 tablespoon of vegetable oil to the empty side. Crack the eggs into the oil and cook to your desired doneness.
- Serve the kimchi fried rice topped with the fried eggs and garnished with chopped scallions.
