Mujaddara (Lentils And Rice)

  1. Rinse the lentils and rice separately.
  2. In a medium saucepan, combine the Lentils & Rice ingredients. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils and rice are tender and the water is absorbed. Fluff with a fork.
  3. While the lentils and rice are cooking, prepare the Caramelized Onions. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and salt. Cook, stirring occasionally, for 25-30 minutes, or until the onions are deeply golden brown and caramelized, lowering the heat if they begin to burn.
  4. To serve, spoon the Lentils & Rice onto plates and top with the Caramelized Onions and Garnishes.
