Dinner has a soundtrack. 17 songs paced to this 75-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Prepare the Jackfruit: Shred the drained and rinsed jackfruit with two forks. It should resemble pulled pork.
  2. Make the BBQ Sauce: In a medium saucepan, combine all BBQ Sauce ingredients. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally.
  3. Cook the Jackfruit: Add the shredded jackfruit to the BBQ sauce. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the sauce.
  4. Make the Coleslaw: In a medium bowl, combine all Coleslaw ingredients. Mix well and set aside.
  5. Assemble the Po’ Boys: Slice the French bread rolls lengthwise. Spread vegan mayonnaise on both sides of the bread. Layer the BBQ jackfruit onto the bottom half of each roll. Top with coleslaw and dill pickle chips. Close the sandwich and serve immediately.
