  1. Preheat oven to 350°F (175°C).
  2. Season Chicken with 1 tbsp Olive oil, 1 tsp Chili powder, tsp Cumin, tsp Garlic powder, and tsp Salt. Cook in a skillet over medium heat until cooked through. Shred the chicken.
  3. To make the Sauce, melt 2 tbsp Butter in a saucepan over medium heat. Whisk in 2 tbsp All-purpose flour and cook for 1 minute. Gradually whisk in 3 cups Milk and 1 cup Chicken broth. Bring to a simmer, stirring constantly. Stir in 1 tsp Chili powder, tsp Cumin, tsp Garlic powder, tsp Salt, and tsp Cayenne pepper. Simmer for 5 minutes, or until thickened.
  4. In a bowl, combine shredded Chicken, 1 cup Monterey Jack cheese, cup Cheddar cheese, and cup Diced onion.
  5. Warm the Corn tortillas slightly to make them pliable.
  6. Spoon about cup of the Chicken Filling into each tortilla. Roll up tightly and place seam-side down in a baking dish.
  7. Pour the Sauce evenly over the enchiladas.
  8. Bake for 20-25 minutes, or until bubbly and heated through.
  9. Top with Sour cream and Sliced green onions before serving.
