  1. Cook the Rice: Rinse the Rice under cold water until the water runs clear. Combine Rice and Water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the Rice: In a small bowl, combine Rice Vinegar, Sugar, and Salt. Gently fold this mixture into the cooked Rice. Let cool slightly.
  3. Prepare Spicy Mayo: In a small bowl, mix Mayonnaise and Sriracha.
  4. Form the Squares: Lightly oil a baking sheet. Spread the seasoned Rice evenly onto the baking sheet and press down firmly. Let cool completely, then cut into squares.
  5. Fry the Squares: Heat Vegetable Oil in a large skillet over medium-high heat. Fry the Rice squares for 2-3 minutes per side, until golden brown and crispy.
  6. Assemble: Top each crispy Rice square with a slice of Avocado, a drizzle of Spicy Mayo, Black Sesame Seeds, and a small square of Nori. Serve immediately.
