  1. Prepare the Crust: In a large bowl, whisk together the Flour and Salt. Cut in the Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the Ice Water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling: In a large bowl, combine the Apples, Granulated Sugar, Flour, Cinnamon, Nutmeg, and Lemon Juice. Toss to coat.
  4. Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie plate. Transfer the dough to the pie plate and trim the edges.
  5. Pour the Apple Filling into the pie crust. Dot the top with the Butter pieces.
  6. Roll out the second disk of dough and either place it over the filling as a top crust, crimping the edges to seal, or cut into strips for a lattice top.
  7. Cut vents in the top crust to allow steam to escape. Brush the crust with milk or an egg wash (optional) and sprinkle with sugar (optional).
  8. Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
