Instructions
- First, prepare the Pickled Vegetables: In a bowl, combine carrots, daikon radish, white vinegar, sugar, and salt. Mix well and let it sit for at least 15 minutes, or up to an hour, stirring occasionally.
- In a small bowl, mix the mayonnaise and soy sauce to create the spread.
- Slice the baguettes lengthwise, being careful not to cut all the way through.
- Spread the mayonnaise mixture on both sides of the baguette.
- Layer the sliced pork (or ham) onto the bottom half of each baguette.
- Top with the pickled vegetables (drain off excess liquid), cilantro leaves, and sliced jalapeno (if using).
- Close the sandwiches and serve immediately.
