  1. First, prepare the Pickled Vegetables: In a bowl, combine carrots, daikon radish, white vinegar, sugar, and salt. Mix well and let it sit for at least 15 minutes, or up to an hour, stirring occasionally.
  2. In a small bowl, mix the mayonnaise and soy sauce to create the spread.
  3. Slice the baguettes lengthwise, being careful not to cut all the way through.
  4. Spread the mayonnaise mixture on both sides of the baguette.
  5. Layer the sliced pork (or ham) onto the bottom half of each baguette.
  6. Top with the pickled vegetables (drain off excess liquid), cilantro leaves, and sliced jalapeno (if using).
  7. Close the sandwiches and serve immediately.
