4 Redfish fillets (6-8 oz each)
2 tbsp Paprika
1 tbsp Garlic powder
1 tbsp Onion powder
1 tsp Cayenne pepper

A simple and flavorful blackened redfish recipe perfect for a weeknight meal. This version uses readily available spices and a straightforward technique to achieve a delicious, slightly spicy crust.
Instructions
  1. Combine all Blackening Seasoning ingredients in a small bowl.
  2. Pat the Redfish fillets dry with paper towels.
  3. Brush the Redfish fillets with melted Butter.
  4. Generously coat both sides of the Redfish fillets with the Blackening Seasoning.
  5. Heat Olive oil in a large cast-iron skillet over medium-high heat until very hot.
  6. Carefully place the Redfish fillets in the hot skillet and cook for 3-4 minutes per side, or until blackened and cooked through. The fish should flake easily with a fork.
  7. Serve immediately.
