  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the Potatoes. Prick each potato several times with a fork.
  3. Rub the Potatoes with 1 tablespoon of Vegetable Oil and sprinkle with teaspoon of Salt.
  4. Bake the Potatoes for 45-60 minutes, or until tender.
  5. While the potatoes are baking, cook the Bacon until crispy. Drain on paper towels and crumble.
  6. Once the Potatoes are cool enough to handle, cut them in half lengthwise. Scoop out most of the potato flesh, leaving about inch of potato attached to the skin.
  7. Brush the inside of the potato skins with the remaining 1 tablespoon of Vegetable Oil. Sprinkle with the remaining teaspoon of Salt and teaspoon of Black Pepper.
  8. Place the potato skins on a baking sheet and bake for 10-15 minutes, or until crispy.
  9. Remove from oven and fill each potato skin with Shredded Cheddar Cheese and crumbled Bacon.
  10. Return to oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.
  11. Top with Sour Cream and Chopped Green Onions before serving.
