Instructions
- In a bowl, combine all Chicken ingredients. Marinate for at least 15 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through.
- While chicken is grilling, combine all Dressing ingredients in a bowl and whisk until smooth.
- In a large bowl, combine Romaine lettuce, black beans, corn, and cherry tomatoes.
- Slice grilled chicken and add to the salad.
- Pour Dressing over salad and toss to coat.
- Top with shredded cheddar cheese and tortilla strips. Serve immediately.
