Instructions

  1. In a bowl, combine all Chicken ingredients. Marinate for at least 15 minutes.
  2. Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through.
  3. While chicken is grilling, combine all Dressing ingredients in a bowl and whisk until smooth.
  4. In a large bowl, combine Romaine lettuce, black beans, corn, and cherry tomatoes.
  5. Slice grilled chicken and add to the salad.
  6. Pour Dressing over salad and toss to coat.
  7. Top with shredded cheddar cheese and tortilla strips. Serve immediately.
