Copycat Olive Garden Chicken Gnocchi Soup
A comforting and creamy soup inspired by the popular Olive Garden dish, made with readily available ingredients.

Boneless skinless chicken breasts

Italian seasoning
1/2 tsp
Salt
1/4 tsp
Black pepper
1 tbsp

A comforting and creamy soup inspired by the popular Olive Garden dish, made with readily available ingredients.
Instructions
- Season Chicken with Italian seasoning, salt, and pepper. Cook Chicken in a skillet until cooked through, then shred or dice. Set aside.
- Heat Olive oil in a large pot or Dutch oven over medium heat. Add Onion, Carrots, and Celery and cook until softened, about 5-7 minutes.
- Add Garlic and cook for 1 minute more.
- Pour in Chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Stir in Heavy cream and Parmesan cheese until the cheese is melted and the sauce is smooth.
- Add Gnocchi and cook according to package directions, usually 2-3 minutes, or until they float to the surface.
- Stir in Spinach until wilted, about 1-2 minutes.
- Add cooked Chicken to the soup and heat through. Serve immediately.
