Cowboy Potato Bake

A hearty and easy potato bake with ground beef, cheese, and simple seasonings.
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Boil potatoes in salted water until tender, about 15 minutes. Drain and set aside.
- While potatoes are cooking, heat olive oil in a large skillet over medium heat.
- Add ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, salt, and pepper. Cook for 1 minute more.
- In a large bowl, combine the cooked potatoes, ground beef mixture, cream of mushroom soup, and milk. Mix well.
- Pour the mixture into the prepared baking dish.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes, or until golden brown and bubbly.
- Let cool slightly before serving.
