  1. In a large bowl, combine all Brine ingredients and dissolve salt and sugar. Add Pork Tenderloin and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Remove Pork Tenderloin from brine and pat dry. Place between two sheets of plastic wrap and pound to inch thickness.
  3. Prepare three shallow dishes. In the first, combine all Breading ingredients except eggs. In the second, place the beaten Eggs. In the third, place the Panko Bread Crumbs.
  4. Dredge each pork tenderloin piece in the Flour mixture, then dip in the beaten Eggs, and finally coat thoroughly with Panko Bread Crumbs.
  5. Heat Vegetable Oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
  6. Carefully fry the breaded pork tenderloin in batches for 2-3 minutes per side, until golden brown and cooked through.
  7. Remove fried pork tenderloin and place on a wire rack to drain excess oil.
  8. Spread Mayonnaise on Hamburger Buns. Add shredded Lettuce, Tomato slices, and a fried Pork Tenderloin to each bun. Serve immediately.
