Instructions

  1. In a large bowl, combine all Chicken Kafta ingredients. Mix well with your hands until all ingredients are evenly distributed.
  2. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Preheat grill to medium heat or oven to 400°F (200°C).
  4. Divide the chicken mixture into equal portions and shape each portion around a skewer. If baking, place kafta directly on a baking sheet.
  5. Grill the kafta skewers for about 5-7 minutes per side, or until cooked through and slightly browned. If baking, bake for 20-25 minutes, flipping halfway through.
  6. Serve the kafta skewers in pita bread with sliced cucumber, diced tomato, and a dollop of hummus (optional).
