- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and transfer to a 9-inch pie plate. Crimp the edges.
- Prepare the Filling: In a saucepan, combine the milk, sugar, and flour. Cook over medium heat, stirring constantly, until the mixture thickens slightly.
- Remove from heat and stir in the vanilla extract and nutmeg. Let cool slightly.
- Whisk the eggs in a separate bowl. Slowly temper the eggs by whisking in a small amount of the warm milk mixture, then pour the egg mixture into the saucepan and stir to combine.
- Pour the filling into the prepared pie crust. Bake for 45-50 minutes, or until the filling is set and the crust is golden brown. Let cool completely before serving.
