1 cup Cooked chicken-diced
4 cloves Garlic-minced
1 Shallot-minced
1/2 cup Frozen peas

Instructions

  1. In a small bowl, mix together all the Sauce ingredients. Set aside.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat.
  3. Add the Aromatics (garlic and shallot) and cook until fragrant, about 1 minute.
  4. Add the diced Protein (chicken) and Vegetables (carrots and frozen peas) and stir-fry for 2-3 minutes until heated through.
  5. Pour the Sauce mixture over the chicken and vegetables and stir to combine.
  6. Add the Rice and break it up with a spatula. Stir-fry, mixing well with the sauce and other ingredients, until heated through and evenly coated, about 3-5 minutes.
  7. Garnish with Green onions. Serve immediately with fried eggs and fried shallots.
