Instructions
- In a small bowl, mix together all the Sauce ingredients. Set aside.
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add the Aromatics (garlic and shallot) and cook until fragrant, about 1 minute.
- Add the diced Protein (chicken) and Vegetables (carrots and frozen peas) and stir-fry for 2-3 minutes until heated through.
- Pour the Sauce mixture over the chicken and vegetables and stir to combine.
- Add the Rice and break it up with a spatula. Stir-fry, mixing well with the sauce and other ingredients, until heated through and evenly coated, about 3-5 minutes.
- Garnish with Green onions. Serve immediately with fried eggs and fried shallots.
