  1. Season Chicken with salt and pepper.
  2. Heat Olive oil in a large pot or Dutch oven over medium-high heat. Add Chicken and cook until browned and cooked through, about 6-8 minutes. Remove Chicken and set aside. Shred or dice the Chicken.
  3. Add Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes. Add Garlic and cook for 1 minute more.
  4. In a separate saucepan, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1-2 minutes, creating a roux.
  5. Gradually whisk in Chicken broth into the roux, ensuring no lumps form. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  6. Stir in Heavy cream, Dried thyme, and Paprika. Season with Salt and Pepper to taste.
  7. Add the shredded Chicken to the soup and heat through.
  8. Garnish with Chopped fresh parsley before serving.
