1 medium Onion-chopped
2 Tomatoes-chopped
2 cloves Garlic-minced

A quick and easy Palak Paneer recipe perfect for weeknight dinners.

Instructions

  1. If using frozen spinach, thaw and squeeze out excess water. If using fresh spinach, blanch in boiling water for 2 minutes, then drain and chop.
  2. Heat oil in a pan. Add the Onions from the Onion-Tomato Base and sauté until golden brown.
  3. Add the Garlic and Ginger from Onion-Tomato Base and sauté for another minute.
  4. Add the Tomatoes from Onion-Tomato Base and cook until softened.
  5. Add all Spices and cook for 2 minutes, stirring constantly.
  6. Add the Spinach and cook for 5 minutes, stirring occasionally.
  7. Blend the spinach mixture into a smooth puree.
  8. Return the puree to the pan. Add the Paneer and cook for 5 minutes.
  9. Stir in the Heavy Cream and Butter from the Dairy ingredients. Simmer for 2 minutes.
  10. Season with additional Salt if needed. Serve hot with rice or naan.
