A quick and easy Palak Paneer recipe perfect for weeknight dinners.
Instructions
- If using frozen spinach, thaw and squeeze out excess water. If using fresh spinach, blanch in boiling water for 2 minutes, then drain and chop.
- Heat oil in a pan. Add the Onions from the Onion-Tomato Base and sauté until golden brown.
- Add the Garlic and Ginger from Onion-Tomato Base and sauté for another minute.
- Add the Tomatoes from Onion-Tomato Base and cook until softened.
- Add all Spices and cook for 2 minutes, stirring constantly.
- Add the Spinach and cook for 5 minutes, stirring occasionally.
- Blend the spinach mixture into a smooth puree.
- Return the puree to the pan. Add the Paneer and cook for 5 minutes.
- Stir in the Heavy Cream and Butter from the Dairy ingredients. Simmer for 2 minutes.
- Season with additional Salt if needed. Serve hot with rice or naan.
