Instructions
  1. Rinse the Dried Black Eyed Peas thoroughly.
  2. Place the Peas in a large pot and cover with water. Soak for at least 4 hours, or overnight.
  3. Drain the Peas and return them to the pot. Add the Ham Hock, Chicken Broth, and Aromatics.
  4. Bring to a boil, then reduce heat and simmer for 1.5 - 2 hours, or until the Peas are tender. Stir occasionally.
  5. During the last 30 minutes of cooking, add the Seasoning. Adjust seasoning to taste.
  6. Remove the Ham Hock and shred the meat. Return the shredded meat to the pot.
  7. Serve hot.
