  1. Cook the Elbow Macaroni according to package directions. Drain and set aside.
  2. In a large saucepan, melt the Butter over medium heat. Whisk in the All-Purpose Flour and cook for 1-2 minutes, creating a roux.
  3. Gradually whisk in the Milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat to low and stir in the Cheddar Cheese, Monterey Jack Cheese, Garlic Powder, Paprika, Cayenne Pepper, Salt, and Black Pepper. Stir until the cheese is melted and the sauce is smooth.
  5. Add the cooked Macaroni to the cheese sauce and stir to combine. Let cool slightly.
  6. Place a spoonful of the Mac & Cheese mixture in the center of a Wonton Wrapper. Brush the edges of the wrapper with the beaten Egg.
  7. Fold the wrapper diagonally to form a triangle, pressing the edges firmly to seal. Repeat with remaining wrappers and filling.
  8. Heat Vegetable Oil in a deep fryer or large pot to 350°F (175°C).
  9. Fry the eggrolls in batches for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.
  10. Serve immediately.
