1 cup Carrots-diced
1 cup Celery-diced
1 cup Onion-diced
1 cup Potatoes-diced

Instructions
  1. Heat Olive Oil in a large pot over medium heat.
  2. Add Carrots, Celery, and Onion from the Vegetables group and cook until softened, about 5-7 minutes.
  3. Add Potatoes, Green Beans, and Corn from the Vegetables group and cook for another 3 minutes.
  4. Pour in Vegetable Broth from the Broth & Seasoning group.
  5. Add Diced Tomatoes, Thyme, Oregano, Pepper, and Salt from the Broth & Seasoning group.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes, or until vegetables are tender.
  7. Serve hot.
