A simple and refreshing Vietnamese spring roll recipe, perfect for beginners.

Instructions

  1. Prepare all ingredients: Cook shrimp and pork, cook rice noodles, julienne carrots, and wash vegetables and herbs.
  2. Prepare the Peanut Sauce: Combine all Peanut Sauce ingredients in a small bowl and whisk until smooth. Add more water if needed to reach desired consistency.
  3. Soften the rice paper wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until softened but still pliable.
  4. Assemble the spring roll: Lay the softened rice paper wrapper flat on a clean surface. Arrange a small amount of rice noodles, lettuce, carrots, bean sprouts, mint, cilantro, shrimp, and pork in the center of the wrapper.
  5. Fold the spring roll: Fold the sides of the wrapper inward, then tightly roll from the bottom up, like a burrito.
  6. Repeat: Repeat steps 3-5 with the remaining rice paper wrappers and filling ingredients.
  7. Serve: Serve immediately with the prepared Peanut Sauce for dipping.
