16 ounces Cottage Cheese-low fat
1/4 cup Parmesan Cheese-grated
2 tablespoons Butter
2 cloves Garlic-minced

A quick and easy Alfredo sauce made with whipped cottage cheese for a protein-packed and lighter alternative to traditional Alfredo. Perfect for a weeknight meal.
Instructions
  1. Cook Pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. While pasta is cooking, melt Butter in a medium saucepan over medium heat. Add Garlic and cook for 1 minute, until fragrant.
  3. Add Cottage Cheese to the saucepan and stir to combine. Cook for 5 minutes, stirring frequently, until heated through.
  4. Remove from heat and stir in Parmesan Cheese, Salt, and Pepper.
  5. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.
  6. Add cooked Pasta to the sauce and toss to coat. Serve immediately.
