  1. Prepare the Beef Filling: In a large skillet, brown the Ground Beef over medium-high heat. Drain off any excess grease. Add the Onion and Garlic and cook until softened, about 5 minutes. Stir in the Chili Powder, Cumin, and Smoked Paprika. Add Water and simmer for 10 minutes, allowing the flavors to meld.
  2. Prepare the Enchilada Sauce: In a saucepan, heat the Vegetable Oil over medium heat. Whisk in the Flour and cook for 1-2 minutes, creating a roux. Gradually whisk in the Beef Broth, ensuring no lumps form. Add the Chili Powder, Cumin, Garlic Powder, Onion Powder, and Cayenne Pepper. Bring to a simmer and cook for 5-7 minutes, or until slightly thickened.
  3. Assemble the Enchiladas: Preheat oven to 350°F (175°C). Lightly dip each Corn Tortilla in the Enchilada Sauce to soften. Fill each tortilla with about cup of the Beef Filling and roll it up tightly. Place the rolled enchiladas seam-side down in a baking dish.
  4. Bake: Pour the remaining Enchilada Sauce over the enchiladas. Sprinkle with the Shredded Cheddar Cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve: Garnish with Sour Cream before serving.
