  1. In a large pot or Dutch oven, brown the Beef in Olive oil over medium-high heat. Work in batches to avoid overcrowding.
  2. Remove the Beef and set aside. Add the Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the All-purpose flour and cook for 1 minute.
  4. Gradually whisk in the Beef broth, ensuring no lumps form.
  5. Add the Strong brewed coffee, Worcestershire sauce, Thyme, Salt, and Pepper. Bring to a simmer.
  6. Return the Beef to the pot. Add the Potatoes and cook until the Beef and Potatoes are tender, about 60-75 minutes.
  7. Stir in the Frozen peas during the last 5 minutes of cooking.
  8. Serve hot.
