1 pound Sweet Potatoes-peeled and chopped
1 pound Red Potatoes-quartered
1 pound Parsnips-peeled and chopped
2 tablespoons Olive Oil

Instructions
  1. Soak cedar planks in water for at least 2 hours.
  2. In a large bowl, combine all Vegetables.
  3. In a separate bowl, whisk together all Marinade ingredients.
  4. Pour Marinade over Vegetables and toss to coat evenly.
  5. Preheat grill to medium heat.
  6. Place marinated Vegetables onto soaked cedar planks.
  7. Grill for 20-25 minutes, flipping halfway through, or until vegetables are tender and slightly charred.
  8. Remove from grill and serve immediately.
