  1. Prepare a two-zone charcoal fire; ensure one side of the grill is hot for searing and the other is empty for indirect cooking.
  2. Toss wings with kosher salt and place over the indirect heat zone; cover and cook for 35 minutes until the skin is rendered and golden brown.
  3. While wings cook, simmer the Malt vinegar and brown sugar in a small saucepan over medium heat until reduced by half into a light syrup.
  4. Move wings to the direct heat zone to crisp the skin for 2 minutes per side, then toss in the reduced glaze and finish with sea salt flakes and pepper.
