  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together all Dry Ingredients.
  3. Cut in the Cold Unsalted Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine Buttermilk, of the Cheddar Cheese, and Scallions.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Sprinkle the remaining Cheddar Cheese over the biscuit bombs.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Serve warm.
