Instructions
  1. In a large bowl, combine all Johnnycake Batter ingredients and mix until just combined. Do not overmix.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour 1/4 cup of batter onto the hot griddle for each johnnycake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve immediately with butter and maple syrup, if desired.
