  1. Prepare the Chicken: In a bowl, combine Olive oil, Chili powder, Cumin, Garlic powder, Salt, and Pepper. Marinate the Chicken breasts in this mixture for at least 15 minutes.
  2. Grill or pan-fry the Chicken until cooked through (internal temperature of 165°F/74°C). Let cool and slice.
  3. Prepare the Dressing: In a separate bowl, combine all Dressing ingredients and mix well.
  4. Assemble the Salad: In a large bowl, combine Romaine lettuce, Black beans, Corn, Red onion, and Cherry tomatoes.
  5. Add the sliced Chicken and Avocado to the salad.
  6. Pour the Dressing over the salad and toss gently to coat.
  7. Top with Shredded Monterey Jack cheese and Tortilla strips before serving.
