  1. Preheat oven to 350°F (175°C).
  2. Cook Pasta according to package directions. Drain and set aside.
  3. In a large skillet, brown Chicken over medium heat. Drain off any excess grease.
  4. Add Sauce ingredients to the skillet with the Chicken. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Combine cooked Pasta and Sauce mixture in a large bowl.
  6. Stir in 1 cup of Cheddar cheese and cup of Monterey Jack cheese.
  7. Pour the mixture into a greased 9x13 inch baking dish.
  8. Top with remaining cheese.
  9. Bake for 20-25 minutes, or until bubbly and golden brown.
  10. Garnish with Sour cream and Green onions before serving.
