1.5 lbs Chicken breasts-cut into strips
2 tbsp Olive oil
1 tbsp Chili powder
1 tsp Cumin
1/2 tsp Garlic powder

A quick and easy weeknight meal featuring seasoned chicken, sautéed peppers and onions, and your favorite fajita toppings served over rice.
Instructions
  1. Prepare the Rice: Combine Rice and Water in a saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until water is absorbed. Fluff with a fork.
  2. Marinate the Chicken: In a bowl, combine all Marinade ingredients. Add Chicken and toss to coat. Let marinate for at least 15 minutes.
  3. Cook the Chicken: Heat a large skillet over medium-high heat. Add marinated Chicken and cook for 6-8 minutes, or until cooked through.
  4. Sauté the Vegetables: In the same skillet, add Filling ingredients and sauté for 5-7 minutes, or until tender-crisp.
  5. Assemble the Bowls: Divide Rice among bowls. Top with Chicken, sautéed vegetables, Sour cream, Salsa, Cheddar cheese, and a Lime wedge.
