  1. In a large bowl, mash the Chickpeas slightly with a fork, leaving some texture.
  2. Add the Vegetables to the bowl with the chickpeas.
  3. In a separate small bowl, whisk together all Dressing ingredients until well combined.
  4. Pour the Dressing over the chickpea and vegetable mixture.
  5. Stir well to combine. Taste and adjust seasoning as needed.
  6. Chill for at least 10 minutes before serving to allow flavors to meld.
