1 lb Ground Beef
1 tbsp Olive Oil
1/2 Onion - diced
2 cloves Garlic - minced

A simplified version of Chili's famous Texas Cheese Fries, perfect for a quick and satisfying meal at home.
Instructions
  1. Prepare the Fries: Cook the frozen French fries according to package directions. Keep warm.
  2. Make the Chili: In a large skillet, heat Olive Oil over medium-high heat. Add Ground Beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add Onion and Garlic to the skillet and cook until softened, about 5 minutes. Stir in Diced Tomatoes, Kidney Beans, Chili Powder, Cumin, Paprika, and Cayenne Pepper (if using). Season with Salt and Pepper to taste. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. Make the Cheese Sauce: In a medium saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes, creating a roux. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, until thickened, about 5-7 minutes.
  5. Reduce heat to low and stir in Cheddar Cheese and Garlic Powder until melted and smooth. Season with Salt and Pepper to taste.
  6. Assemble: Place the cooked Fries on a serving platter. Top with Chili, then generously pour the Cheese Sauce over the top. Garnish with Green Onions and serve immediately.
