  1. In a bowl, whisk together all Marinade ingredients.
  2. Place Elk Tenderloin in a resealable bag and pour marinade over it. Marinate in the refrigerator for at least 2 hours, or up to overnight.
  3. Preheat oven to 400°F (200°C).
  4. Remove Elk Tenderloin from marinade and pat dry. Season with salt and pepper.
  5. Sear the tenderloin in a hot skillet with a little oil for 2-3 minutes per side, until browned.
  6. In a small saucepan, combine all Chokecherry Glaze ingredients. Bring to a simmer over medium heat, stirring until sugar is dissolved.
  7. Place the seared Elk Tenderloin in a baking dish and brush generously with Chokecherry Glaze.
  8. Bake for 15-20 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  9. Let rest for 10 minutes before slicing and serving.
