  1. In a large pot or Dutch oven, melt Butter over medium heat.
  2. Add Aromatics and cook until softened, about 5-7 minutes.
  3. Add Potatoes and Broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20-25 minutes.
  4. Carefully mash some of the potatoes to thicken the soup (leave some chunks for texture).
  5. Stir in Milk, Heavy Cream, Salt, and Pepper.
  6. Add Molasses and stir to combine.
  7. Heat through, but do not boil. Serve hot.
