Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large bowl, combine all Dry Ingredients.
In a separate bowl, whisk together all Wet Ingredients.
Add the Wet Ingredients to the Dry Ingredients and mix until just combined. Do not overmix.
Fold in the Shredded Carrots, Chopped Walnuts, Raisins, and Shredded Coconut.
Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely in the pan before frosting.
